Healthy recipes:
Dairy free pancakes.
for 4 large pancakes
3/4 cup almond milk
2 tablespoons virgin coconut oil
1 egg
1/2 cup whole wheat flour
1/2 cup all purpose flour
2 teaspoons baking powder (aluminum free)
4 tablespoon brown sugar
1/4 teaspoon salt
-Warm up milk slightly if it was refrigerated untill lukewarm ( or the oil will solidify)
-Place milk, oil and eggs in mixer bowl,. whip 30 mn.
-Mix baking powder with whole wheat flour, all purpose flour, sugar and salt.
-Add the dry mixture to the mixer bowl and whip until combined, 30 seconds or more.
-Warm up electric griddle to 350 or pan to medium hot, grease the griddle and pour the batter one full laddle at a time.
-Cook until bubbles form on the surface and the edges become dry, flip and cook until golden on the underside.
Vegan protein shake.
1 1/2 cup of cold almond milk
1 tsp chia seed
1 tsp raw cocoa powder
1 tbs hemp protein powder
1/2 tsp spirulina
1 tbs raw honey
1 tbs almond butter
Pour all ingredients in a blender and blend until smooth. ( you could add a banana or other fruits )
Sourdough starter.
Making a sourdough starter is not as hard as some people make it seem. You just need to invest a little bit of your time, no more than 5 minutes a day. There are a lot of different ways of making your own starter, here is the recipe that worked for me, I tried different ways and after a couple of failures and a couple of long living starters here is the way that worked the best for me..
I recommend to make your starter either in the morning or at night since it will have to be fed twice a day around 12 hours apart.
You will need:
A clean glass jar with lid.
A measuring spoon.
Organic white flour
2 organic grapes
Filtered water

- In the glass jar add 2 tablespoon of organic white flour,1 tablespoon of filtered water, the juice of 2 grapes
(squeeze 2 organic grapes rubbing the skin of the grape in the juice since beneficial yeast lives on the skin of organic grapes)
mix well, place the lid on without closing it .
_12 hours later (approximately)
Transfer 1 tablespoon of the previous starter to a clean jar*, add 2 tablespoon of flour and 1 tablespoon of water, mix well place cover on top (loose)
Discard what is left in the first jar.
repeat the previous step morning and night for the next few days.
As the yeast start developing in the starter small bubbles will appear and a smell will develop,it may smell sweet, like vinegar or like alcohol, keep on repeating the process until you obtain a starter that doubles in volume and smells like sourdough bread. It may take from three days to a couple of weeks. When you feel that your starter is finally active add to it a cup of flour and a half cup of water, 12 hours later you will have enough starter to make a bread. Always save a small amount of starter add it to a clean jar and add the amount of flour needed for your next recipe or just 2 tablespoons to feed it. If you reached this step, congratulation your are now the proud owner of a starter or as I like to call it your new pet, it will need changing and feeding twice daily to stay alive and happy. If you need to discontinue the use of the starter you can save it in the refrigerator and feed it only once a week.
If you neglected it and it does not look or smell so good anymore you can almost always revive it by starting to feed it again, and wait a couple of days until it regains its activity.
* it is important to use a clean jar every time since there is residues of starter on the side of the jar, those residue may not have access to the fresh flour you add and they are going to produce alcohol as they are going to be too fermented, this alcohol will contaminate your fresh starter resulting in a rather foul smelling mixture, believe me, I learned this one from my own experience.
Bread machine sourdough bread.
Ok, I know, I may be a little bit lazy and it may not be real sourdough bread. I always make our own bread with my bread machine it is so easy and does not take any more than 5 minutes of my crazy busy schedule. Real sourdough bread needs to be kneaded and risen several times, the bread machine I have does not offer such a program, maybe yours is more flexible. Here is my recipe for super easy sourdough bread:
You need a bread machine with a "dough only" program and also a "bake only" program.
You will need:
1 cup starter
2 cups organic white flour
3/4 cup filtered water
1 1/2 teaspoon Himalayan pink fine salt
2 tablespoon organic brown sugar

Here is the hard part: add all the ingredients to the bread machine put it on the dough program and press start.That's it .
while the machine starts kneading the dough, check on the consistency, it has to be a little wet and sticky on the surface of a well formed dough, when you touch it with your finger some dough will stick to it. Add water or flour until you reach the proper consistency ( you want the dough a little wet since it will dry up during the 8 hours or more of rising time.)
When the dough program is finished leave the the dough in the machine for a minimum of 8 hours, depending on how active is your starter and the room temperature. When you check on the dough try to open the lid as little as possible, wait until the dough ball has spread and doubled in size. it may take as much as 12 hours, the longer the time the more sour the bread will be. In my own experience the sourdough bread don't rise as much as the commercial yeast bread, but it makes up for it in flavor.
When you feel that the bread rose enough start the "bake program" and set it for one hour. Voila!
